Noto Waffle - Noto Dainagon Matcha

Noto Dainagon azuki beans are a rare, high-grade variety of beans in Noto, so precious they are called "red diamonds." They are produced only in a limited area of Oku-Noto, Ishikawa Prefecture, and are registered as a regional collective trademark.

We use 100% of these beans, which are characterized by their overwhelmingly large size (about 2 to 3 times that of regular azuki beans) and jewel-like vibrant red color, to create a moist, homemade anko (sweet bean paste) that is wrapped in the dough. The skin is extremely thin, and it is characterized by its melt-in-your-mouth tenderness and rich sweetness.

Finally, it is coated with aromatic matcha chocolate. The refreshing bitterness of matcha further enhances the deep richness of the Dainagon azuki beans.
